COCONUT CURRY SOUP MIX
Add all ingredients, plus four cups of water and 400g of coconut milk to a saucepan. Bring to a boil over high heat, reduce heat to low, add 1 -2 vege stock paste (available in store or replace with vege stock cube) and simmer until the lentils are tender, about 20 minutes. Season to taste or add in some vegan Parmesan available in store.
