Du Puy Lentils

Du Puy lentils are the small, blue-green marbled lentils grown in the volcanic soil of the southwest of France. They have a slight peppery taste.
Du Puy Lentils have around 1% fat and 44% dietary fibre. They contain Vitamin A and C and other phytochemicals that help prevent disease.
Lentils do not require it, but can be soaked in order to reduce cooking time by about half. Before cooking, rinse lentils in cold water, pick over to remove debris or shrivelled lentils, then drain.
